Quick Blueberry No-Cook Jam
- Put blueberries and lemon juice in a medium bowl. Smash the blueberries with a fork until all are mashed - but doesn't need to be completely macerated.
- Add ground flax seed, stir to combine.
- Let sit to thicken while preparing the oat base.
Oat Base and Prep
- Preheat oven to 325 degrees F. Spray a 9" x 9" square pan (or 8" x 8" for thicker bars) with olive oil or vegetable oil spray.
- Combine all ingredients in a large bowl. Stir until completely mixed.
- Pour the mixture into the prepared pan, and press down with a spoon until it's in one layer across the bottom of the pan.
- Add prepared blueberry jam in a layer on top of the oat base.
- Prepare the topping by mixing the ingredients in a small bowl, and sprinkle in a layer on top of the blueberry jam.
- Bake for 30 minutes.
- Let cool or enjoy warm (it won't be set up completely if warm, but still delicious - see above for ideas)!
Notes
SERVING: Cut into bars, and enjoy!
STORAGE: Store securely in plastic wrap, or in a sealed plastic bag. Enjoy within 1-2 days for the freshest taste and texture.
