Classic Deviled Eggs

This is a classic recipe, with a little optional twist. My mom has been making deviled eggs for parties or family gatherings since I was a child, and I’ve always loved them. They’re easy to make, and always a crowd pleaser.

I’ve included instructions below for how to hard boil the eggs yourself, but if you’re short on time, or just don’t want to take that step, you can usually find prepared hard boiled eggs in the egg section of your grocery store. I know Trader Joe’s sells a 6-pack of these, but many stores do now as well. Those are great to have on hand as snacks, but also makes this recipe even faster and easier. If you’re making these for a large party, Costco actually sells the hard boiled eggs most of the time – they come in a large pack, sectioned off in packs of 2, but it’s not much more than buying the raw eggs!

One ingredient I’ve added to mine that isn’t always in these (and which my mom doesn’t use) is apple cider vinegar. It’s just a little bit, but I think it adds a great flavor to the eggs. You can also add some chopped chives either in the mixture or on top, which is delicious on eggs, but I’ve added the traditional paprika on top here. I use regular paprika, but you can also find smoked paprika in the spices aisle if you like that smokey flavor!

Classic Deviled Eggs

Ingredients
  

  • 6 large eggs
  • 3 tablespoons light mayonnaise
  • 1 tablespoon dijon mustard
  • 1 teaspoon apple cider vinegar optional
  • salt and pepper to taste
  • paprika or smoked paprika, sprinkled for topping

Instructions
 

Hard-Boiled Eggs

  • This part is optional. If you bought prepared hardboiled eggs, skip ahead to the deviled eggs section.
  • Bring a pot of water to a boil. Reduce the heat to low to ensure the water is no longer boiling or has bubbles and use a skimmer to place the eggs in the water. Then increase the heat back to high and set a timer for 14 minutes.
  • While the eggs are boiling prepare an ice water bath and set aside.
  • After 14 minutes, remove the eggs from the water and place in the ice water bath.
  • Once the eggs have cooled completely, peel them.

Deviled Eggs

  • Take the peeled eggs, and slice in half lengthwise. Remove the yolk to a small bowl with a spoon and place the egg whites on a plate.
  • Mash the yolks with a fork and add the mayonnaise, mustard, vinegar, salt and pepper. Stir everything together.
  • Use a spoon or a piping bag* to add a portion of the deviled egg mixture back into the hole of each egg white. Sprinkle on paprika for garnish.

Notes

*I just a piping bag to make them look a little more beautiful and appealing, but a spoon will work as well if you just want to get the mixture into the egg white halves.
