Coconut Bread

Coconut is such a delicious flavor – and one I don’t always remember to use it! It automatically makes me think of tropical places, like Hawaii, or treats, like Mounds bars – all good things! I wanted to make a quick bread (no rising time), with a the delicious coconut flavor I love, and something you can have all day! This bread doesn’t disappoint! It’s also my husband’s favorite flavor (one of them at least), so this is perfect for him as well 🙂 Have it for breakfast, as a snack, or even as a sweet treat at the end of the day. You can also add some chocolate chips to the batter, or drizzle the bread with chocolate – yum!

I wanted to make a quick bread (no rising time), with a the delicious coconut flavor I love, and something you can have all day! This bread doesn’t disappoint!

Servings 1 regular loaf

Ingredients
  

  • 2 eggs
  • 1 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon lime juice
  • 2 1/2 cups all-purpose flour*
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup sugar
  • 1 1/2 cups sweetened coconut flakes
  • 6 tablespoons unsalted butter melted

Instructions
 

  • Heat oven to 350 F.
  • In a small bowl, combine eggs, milk, vanilla, and lime juice. Stir to combine.
  • In a large bowl, combine flour, baking powder, salt, sugar, and coconut flakes. Stir to combine.
  • Make a well in the flour mixture, pour in the wet mixture. Stir until combined.
  • Add butter to the mixture, stir completely in.
  • Prepare pan with PAM spray or similar oil spray. Separate batter into the 8 mini loaves or pour into the one full loaf pan. Bake for 25-30 minutes for the smaller loaves, or 45-60 minutes for the regular loaf.
  • Let cool and Enjoy!

Notes

SERVING: Have it for breakfast, as a snack, or even as a sweet treat at the end of the day. You can also add some chocolate chips to the batter, or drizzle the bread with chocolate – yum!
 
STORAGE: Store securely in plastic wrap, or in a sealed plastic bag. Enjoy within 3-4 days for the freshest taste and texture.
