Pumpkin Pie Smoothie, Two Ways

Happy Spring! It may not be anywhere near Fall, but I can always go from Pumpkin Pie. And while I would absolutely eat Pumpkin Pie for breakfast, this smoothie is definitely a healthy, quicker version – and a perfect start to the week! And not only is it delicious on it’s own, but you can also use it as a base for oatmeal! I mixed the smoothie in with some instant oatmeal (my favorite is this one – Trader Joe’s Instant Oatmeal), heated it in the microwave for 45-60 seconds, and mixed. It was SO good and extra filling for breakfast if you need more than just a smoothie.

I’m writing just the smoothie recipe below, but as I said, it’s super easy to turn it into a filling, oatmeal breakfast as well!

Pumpkin Pie Smoothie

Servings 1 smoothie

Ingredients
  

  • 1 banana
  • 1/4 cup pumpkin puree*
  • 4 dates roughly chopped
  • 1 teaspoon cinnamon
  • pinch of ground ginger
  • pinch of nutmeg
  • pinch of all spice
  • pinch of cloves
  • 1/2 cup milk of choice lowfat, whole, almond, coconut, etc.

Instructions
 

  • Place all of the ingredients in a blender. Blend until smooth.
  • Enjoy!
  • Note – for oatmeal, add the blended smoothie to one packet of instant oatmeal of your choice. Heat in microwave for 45-60 seconds. Stir and enjoy!

Notes

*You can also use a 4 oz jar of Pumpkin puree from the baby section – I have Beech Nut Pumpkin on hand because I have a young child, and this is JUST pumpkin – and that way you don’t have to open a whole large can!

STORAGE: This only serves one, but if you have leftover, store in the refrigerator.
